Is there a way to set other products to be able to ignore the global cart minimum?

Resolution:

1. There is no direct way to exclude specific products from the global cart minimum. But you can emulate the same effect using our group limiting functionality.
2. To do so, please remove the current minimum from our "General" settings section; Then switch to our "Group" settings section and create a group with a negative group-by condition there.
